Chef acreano apresenta tambaqui moqueado na palha da banana com farofa de açaí no Inova Amazônia Summit

Acrean chef Jaire Cunha presented a traditional dish featuring tambaqui fish wrapped in banana leaves during the Inova Amazonia Summit 2026. The demonstration took place on Friday, September 18, as part of the event’s Cozinha Show program.

The dish, prepared using moqueado techniques, was served with a side of acai farofa sourced from the municipality of Feijo. The presentation was held within the event’s Geographical Indications space, which focuses on highlighting regional ingredients and culinary practices native to the Amazon basin.
